My 3 simple healthy salads
I love a good fresh garden salad, bruschetta plate or just my classic mixed beans salad. Pretty much whatever vegetables we have in the fridge, we love to experiment. This has stemmed from my Serbian Mum as we used to pick fresh produce straight from the garden. While we typically make our staple olive oil, white wine vinegar, crushed garlic with S&P dressing nothing beats grabbing a bottle on the run, especially when we are away on weekends or visiting friends. I am renowned for being the "Salad Queen" when hosting or attending lunches and dinners, so here are my 3 fresh and simple salads I like to take with us. Healthy Salads
Tomato Salad
- 6-7 tomatoes cut into wedges
- 1 cucumber sliced
- 1/2 Spanish onion finely sliced
- Bunch of flat leaf chopped parsley
Beans Salad
- 2-3 cans of mixed beans
- 1 Spanish onion finely diced
- 1 capsicum diced
- Bunch of flat leaf chopped parsley
Bruschetta plate
- 1 cup of rocket salad
- 1-2 finely sliced tomatoes
- 4-5 finely sliced pieces of red onion
- Crumbled feta cheese
- 4-5 Kalamata pitted olives
- Bunch of flat leaf chopped parsley
METHOD
1. Arrange the salads in your preferred serving bowls or for the Bruschetta plate, layer the plate with rocket followed by tomatoes, olives, onion and feta.
2. Drizzle olive oil, lemon juice, crushed garlic and season with salt and pepper and you're done. How simple is that!
