Merry Christmas 2015!

image1 Merry Christmas! My, the year has flown by - particularly  this last month. After all the excitement of the cruise and our move, we'll be keeping Christmas this year easy and simple. But of course, Christmas dinner has to be special, so this year I've come up with the perfect dish to make. Do you remember when I met up with the talented chef and cookbook writer Tobbie Puttock? This recipe he taught me for King Size Prawns is just what I had in mind. Tasty, fresh and a healthy option even for the holiday season. That's definitely a tick in my books!

Keeping along with our simple theme, we'll be serving this alongside an old-school favourite - this festive christmas watermelon salad. Just toss some watermelon (I used a melon baller to make it interesting) along with red or green grapes, feta cheese and whatever greens and other veggies you might have on hand. I like to dress mine with macadamia oil and lemon juice... beautiful!

Of course, even after all the yummy food we'll be eating, it's so easy to stay fit and feeling fantastic if you remember to do your #xmas25squats. We'll be doing them on the beach in line with an Australian Summer Christmas ;).
