How to make home made yoghurt
This recipe brings back loads of memories for me. My Serbian Mum, used to make this religiously (especially over summer) when I was growing up. Kiselo mleko AKA fermented milk, butter milk, lassi and yoghurt etc.... is a dairy food that has been fermented with lactic acid bacteria such as Lactobacillus, Lactococcus, and Leuconostoc. The fermentation process increases the shelf-life of the product, while enhancing the taste and improving the digestibility of milk. This is excellent for those that are lactose intolerant. It's also fabulous after we have all been through a dose of penicillin, great to get the good bacteria back into our bodies! Here are some ways we enjoy eating/drinking our "quick and easy" home made yoghurt.
Fruit salad soup with coconut yoghurt
1/2 cup of coconut yoghurt
1 cup of coconut milk
NB: you can buy probiotic capsules or powder from your local health food store, simply replace with yoghurt and add 1-2 capsules to the milk.
Natural dairy milk yoghurt
1/2 cup of natural Greek yoghurt
1 cup of dairy milk
Heat up milk just before boiling point and place into a glass jar or if you have any type of heavy top pan you can store your yoghurt in. I allow the milk to cool slightly and add the yoghurt (or probiotics, if you are using them) and keep in an oven overnight at approx. 40-50C degrees - 110F.
Depending on how long you can wait for your yoghurt to set (I can only survive 4hrs or the following day) hence mine didn't set completely but we love making kiselo mleko, the drinking style yoghurt. If you prefer yours thicker, you can always wait longer than I do or add some gelatine. Just remember it's all about the culture, if you don't have the right amount it won't set or even have that tangy yoghurt taste.
Health benefits of drinking yoghurt
- fresh yoghurt is digested in about one hour, as compared to the three hours it can take to digest milk.
- loaded with vitamins such as potassium, phosphorous, riboflavin, iodine, zinc, and vitamin B5 (pantothenic acid). Yogurt also contains B12, which maintains red blood cells and helps keep your nervous system functioning properly
- freshly-made yoghurt is filled with countless numbers of beneficial bacteria that help digestion and kill harmful viruses.
- people who have trouble digesting milk may find that fresh yogurt is much easier to digest and actually aids in their digestion as well.
- yoghurt is high in calcium. The live-active cultures in yogurt increase the absorption of calcium, a 220gm serving of yogurt gets more calcium into the body than the same volume of milk can.
- people taking antibiotics (which can destroy lactic flora) are often advised to eat yogurt to replace the healthy bacteria.
- decreased bloating, as well as relief of both constipation and diarrhoea and other stomach disorders.
Every morning my kids drink this to get that friendly bacteria, apparently it decreases when it gets refrigerated.
