Healthy Chicken Caeser Salad

Here's an absolute family favourite of ours. Especially when we are short of time and don't want to drive through the Golden Arches ;-) Instead we grab a roasted chicken and typically I have the other ingredients in the pantry and fridge or I'll compromise.  

Healthy Caeser Salad

 

Ingredients

1 roasted chicken

1 packet of cherry or roma tomatoes (any tomatoes will do)

x2 heads of Cos salad (spinach or any type of salad you have)

1 cup of Natural Greek yogurt

1tsp horseradish sauce

1tsp Dijon mustard

4-6 soft boiled eggs (depends how many in your household)

handful of chopped parsley

1 tablespoon of grated parmesan

3-5 anchovies (omit if you are not a fan)

Lemon juice

S&P

Chicken

Method:

1. Boil eggs

2. Wash salad and tomatoes

3. Shred chicken (kids helped me do this)

4. Slice salad and tomatoes in bite sizes and place in serving bowl

5. Meanwhile mix yogurt with sauces, Parmesan cheese, 1/2 lemon juice and anchovies (if using).

6. Peel and cut eggs, pour dressing and add extra Parmesan cheese and sprinkle with parsley and add S&P.

That's it! As you know I like to keep it simple sweetie. KISS most of the time!!!

NB: Feel free to add cooked bacon and croutons but this dinner was pretty much ready when the eggs were cooked, peeled and everything was blended and mixed by the girls.
