Chocolate and hazelnut muffins
Okay, so it's not everyday that the kids ALWAYS eat my healthy creations! Don't get me wrong they will taste test but they will also be the first ones to say;
Thanks Mum but no, I don't want another one. It's nice but not for me!
Bless them, firstly for finishing the entire muffin and secondly for being so polite and honest! Ha ha! You know what though? It means more for me! I always turn a negative into a positive - ha ha.
So I have placed these babies in the freezer for my "go to food" when I am out and about and need to pack a healthy and nutritious snack.
Chocolate and hazelnut muffins
Ingredients (makes 8 muffins)
3 zucchini's (you can use less)
3 eggs
1 cup of hazelnut meal
1 cup of desiccated coconut
1/2 cup rice syrup (or your preferred sweetener)
2-5 tablespoons of cacao powder (depends on how chocolatey you like it)
2 tsp vanilla essence
1 cup of wholemeal self-raising flour (or less/more depends how many zucchini's you use)
1/2 cup milk (or a splash just to get the right mixture consistency)
Pinch of salt
Method
Grate zucchini's and add all dry ingredients. Mix wet ingredients together and gently fold into dry mix. Pour into muffin tray with liners and bake in a pre-heated 170C-180C oven until the skewer tests positive.
I personally enjoyed eating them. I love tasting all the wholefood goodness and not the traditional overloaded sugary and gluggy flour ones, I used to buy with my latte. My only change would be to use less zucchini's (I think I went a little overboard with 3!) I am sure the kids wouldn't have noticed them as much, as it's more of a dewy consistency. I am loving the flavours and taste of the hazelnut meal and chocolate which makes it all the better for me to eat these babies all on my own.
