Vegan Coconut Rice Pudding
This has been a family classic since I was a kid and now I get to share it with mine. We used to have loads of white sugar and cows milk but in today’s healthy and conscious living world we have made this healthier for our own health and saving our beautiful animals.
Vegan Coconut Rice Pudding
Ingredients
1L coconut milk
3/4 cups of your preferred rice
1/4 teaspoon salt
2-3 grated palm sugar
1 teaspoon vanilla essence
2 tablespoons of shredded coconut
Ground nutmeg & cinnamon to decorate
Method
Traditionally you can cook your rice on a stove top until you reach your desired consistency. Keep adding liquid if required.
To make things easy and quick I use a rice steamer. Once the rice is cooked I add the grated palm sugar, more liquid if it stiffens and serve on plates with a sprinkle of cinnamon and nutmeg.
