Vegan Coconut Rice Pudding

This has been a family classic since I was a kid and now I get to share it with mine. We used to have loads of white sugar and cows milk but in today’s ​healthy and conscious living world we have made this healthier for our own health and saving our beautiful animals. 

​Vegan Coconut Rice Pudding 


1L coconut milk

3/4 cups of your preferred rice

1/4 teaspoon salt  

2-3 grated palm sugar

1 teaspoon vanilla essence

2 tablespoons of shredded coconut  

Ground nutmeg & cinnamon to decorate  


Traditionally you can cook your rice on a stove top until you reach your desired consistency. Keep adding liquid if required.  

To make things easy and quick I use a rice steamer. Once the rice is cooked I add the grated palm sugar, more liquid if it stiffens and serve on plates with a sprinkle of cinnamon and nutmeg.
