Banana choc chip muffins and moving house
Who else loves packing? I'm a pro since moving up here 15 months ago, this will be our third move!!! Can you believe it? Today was spent packing boxes, organising mail redirections, utility disconnections, baking, having fun and finished the night with a Skype session with my Baba from Serbia who's 91 years old. She's adorable.

Here's a super quick and easy recipe I whip up for unexpected guests or last minute dessert! Also amazing for kids lunchbox snacks!
Banana Choc Chip Muffins
2 cups of self-raising wholemeal or white flour
1-2 mashed bananas
1 egg (or you can omit for egg free version)
1/2 cup choc chips or entire packet (for that extra gooey chocolate taste!)
1/4 cup of coconut oul
Sprinkle of cinnamon & vanilla essence
1/2 cup natural Greek yoghurt
1 cup of milk
1/4 cup coconut sugar (if you need it)
Mix wet ingredients together and add with dry until combined.
Place in muffin holders and bake in preheated oven 180-200C degrees for half an hour or until skewer stick comes out dry.
