Zucchini Fritters with Cucumber Salad

I absolutely love dinners that are super fresh tasting and bursting with so many delicious flavours. This is one of those meals that the kids keep requesting. If you have a food processor, this will make your life easier otherwise get the kids to help grate the zucchini with you!

You will need;

  • 4 cups shredded zucchini
  • 2/3 cup all-purpose flour
  • 2 chia eggs
  • 1/3 cup sliced spring onions AKA scallions 
  • 2 Tablespoons olive oil

Method;

1. Squeeze as much excess water from zucchini as you can and sprinkle some salt. 

2. Add zucchini into a bowl with the other ingredients chia eggs, onions, 1/4 teaspoon salt and 1/8 teaspoon pepper, stirring the mixture until well combined. Line a plate with paper towels.

3. Add the olive oil to your frying pan and once oil is hot, scoop 3-tablespoons of the zucchini mixture into the pan, pressing them lightly into rounds and spacing them at least 2 inches apart.

4. Cook the zucchini fritters for 2-3 minutes, then flip them once and cook an additional 2 minutes until golden brown and cooked throughout.

5. Transfer the zucchini fritters to the paper towel-lined plate and sprinkle them with salt. Continue until all your zucchini mixture is cooked.

Serve these delicious zucchini fritters with a side cucumber salad topped with spring onions and sunflower seeds for that extra crunch and zest of limes!

This recipe is super fresh and always a winner for our family dinners and lunch over the weekend.
