Vegan Chocolate Raspberry Nut Fudge Cake
This is so delicious, rich and oh so satisfying. Especially when I am craving chocolate and all I have is cacao, nuts and a punnet of raspberries! Anything is possible when you dream big, believe and make it happen ;-) or rather Google for recipes to make this magic happen!
Vegan Chocolate Raspberry Nut Fudge Cake
NB: this is the mixture afterwards and I will post the after pic once she's cooked!
Ingredients
2 cup self raising flour
1/2 cup cacao powder
Handful of crushed brazil nuts
1 cup maple syrup
125g vegan butter, melted and cooled
2 chia eggs
1 teaspoon vanilla extract
1/4 cup coconut milk
Method
Mix wet ingredients together and slowly fold into dry. Add raspberries and nuts just before pouring into a pre-greased and bake in a pre-heated oven at 170C degrees for 35-40 minutes.
