Vegan and Gluten Free Apple Oat Slices

Super quick and delicious these Apple Oat Slices will be a hit in your household. We love freezing them as well for dessert and serve them with a scoop of icecream, otherwise they are handy in the kids lunch boxes and after school snack. 

Vegan and Gluten Free Apple Oat Slices  

Ingredients
  • 1g Olive Oil Spray
  • 1/3 Cup Self Raising Wholemeal Flour (50g)
  • 1/4 Cup Rolled Oats (23g)
  • 1 Tbsp Coconut or Brown Sugar (17g)
  • 1 Tsp Sultanas (5g)
  • 1 Pinch Ground Cinnamon (1g)
  • 1 Pinch Bi-Carb Soda (1g)
  • 1 Tbsp Olive Oil (20g)
  • 1 Green Apple (125g) grated, with peel on
Method
  1. Preheat oven to 180°. Spray a 19cm x 9cm (base measurement) loaf pan with oil and line with non-stick baking paper, hanging over two long sides.
  2. Combine flour, oats, sugar, sultanas, cinnamon and bicarb in a bowl. Reserve 2 tablespoons of mixture.
  3. Add oil and 3/4 of the grated apple. Mix until well combined. Spoon into loaf pan and smooth surface. Combine reserved flour mixture with remaining grated apple and scatter over top.
  4. Bake for 30-35 minutes or until golden. Set aside to cool slightly. Lift out of the pan using overhanging paper, and cut into slices to serve.
