One of my all time classic recipes but instead of standing beside the stove top flipping 20+ crepes for our family of 7, I decided to bake it!

Peach Cinnamon and Date Syrup Pancake

Ingredients:

1-2 finely sliced peaches

6 tablespoons coconut oil

Chia egg substitute* or 4 eggs

2tsp ground cinnamon

2/3 cup soy milk

2/3 cup all purpose Woolworths Macro“Free From Gluten” flour

2 teaspoons vanilla extract

1/2 teaspoon salt

2 tablespoons Woolworths Macro Date Syrup

Extra date syrup for serving

Method:

1. Preheat oven to 170C degrees and place 4tbs coconut oil and the sliced peaches into a frypan.

2. Using a blender, combine the chia egg substitute* milk, flour, vanilla, 1 teaspoon cinnamon, salt, and 2 tablespoons coconut oil. Blend on high until the batter is smooth and there are no flour clumps.

3. Pour the batter into the frypan back in the oven. Bake 20-25 minutes or until the pancake is golden brown.

4. If desired, drizzle with date syrup. DEVOUR.

How to make a chia egg:

NB: 1 tablespoon of chia seeds + 3 tablespoons of water + 15 minutes = an egg gel type mixture, mother nature you are incredible!
