Mmmonday Poached Pear Passionfruit and Blueberry Coconut Oats

All I can say is bring on the school holidays. Bring on all the mess, play, cooking, exploring, living, laughing and just loving life. That's why I decided to become a Stay At Home Mum. To kick start our kids early learning with loads of fun, happy days, love and simply enjoying every second of their life with them. There's no greater joy than experiencing this with them as I know this time will pass quickly so I'm making the most of it.

It's great not to rush in the mornings with school drop offs, now we can all sit down at the table and enjoy our breakfast together.

This blueberry coconut oats dish, was inspired by Jamie's Daily video so big thanks to this dude for continuing to inspire me daily, and allowing me to prepare healthy recipes for our young family.

POACHED PEAR PASSIONFRUIT WITH BLUEBERRY COCONUT OATS
Ingredients

1/3 cup oats 1/2 cup of coconut chips 1/2 cup blueberries 1tbs natural Greek yoghurt 1 passionfruit 1 banana sliced 1 pear

Method

Quickly toast oats and coconut in a hot pan until golden or you can smell the goodness. Set aside on a plate. Add blueberries to the pan, watch them pop and start to release their natural juices, add some water and wait for this magical sauce to appear! If you like you can add rice malt, maple or any natural syrup to make it more sweeter!

Dollop yoghurt on muesli, pour blueberry sauce on top, decorate with banana and passionfruit add a poached pear. Enjoy!!!

HOW TO POACH A PEAR
I placed peeled pears in water, added 2 cloves, vanilla and cinnamon and cooked these until soft. The house smelt amazing.

We have been playing outside heaps and enjoying the beautiful Spring weather, blue skies and sunshine. I think I might surprise the kids with a mini camping trip next weekend. Where should we go???

I'm trying to make food as fresh, quick and easy, as we out the door before you know it! So I throw whatever I have from the pantry and fridge. This salad was amazing with cherry tomatoes, rocket salad, fresh chickpeas served with grilled chicken.
