Jane Prichard’s Sweet Potato Salad


Ingredients

2 cups Whole grain penne pasta - cooked and drained.
1kg peeled, cubed roasted sweet potato. Toss the sweet potato in olive oil, Moroccan seasoning and maple syrup before roasting.
2 tablespoons of pesto (make my 2 minute pesto)
2 tablespoons chopped Italian parsley
Good handful of poppy seeds
Good handful of sesame seeds
Good handful of linseeds
3 tablespoons pine nuts
500g baby spinach
Purple cabbage or any leafy greens
Moroccon seasoning
Meredith ash dusted goats cheese - crumbed over the top of the salad
Fresh Pomegranate

Assemble all ingredients on a plate 😊

Dressing

Olive oil
Pomegranate molasses
Maple syrup
Whole grain mustard

Method

Jane recommends adding ingredients to taste to your liking. Add to a jar and shake like crazy!

Pour over the salad, and enjoy!
