Banana Passion Pancakes

Life should always be this easy. Got some bananas and feel like pancakes? I’ve got you sorted.

Banana Passion Pancakes 

  • 1-1/2cups Flour
  • 2 Tbsp Coconut sugar
  • 1 Tbsp Baking Powder
  • 1/4 tsp Salt
  • 1 tsp Cinnamon
  • 2 Large Ripe Banana, (1/2 cupmashed/120g)
  • 1 Tbsp Coconut Oil + more for frying
  • 3/4 cup (180ml) Soy Milk (or your preferred non-dairy milk)
  • 1 chia egg (mix 1Tbs chia seeds with 2.5Tbs water)
  • 1 tsp Vanilla Extract
I place all the ingredients together and use a hand blender to ensure the mixture is blended perfectly. 

Be very careful when turning them over as they are pretty delicate but once you get the hang of it, you will be a pro. Unfortunately you can’t flip these pancakes like I normally do.

There you have it! Experiment with different toppings (of course with no added sugar) - we mixed passionfruit with some coconut yogurt and the kids had some maple syrup.

We have

also done them with blueberries, but any fresh berries will do nicely too.
