White Chocolate Custard Tarts
You know how much I love Instagram and meeting people. This recipe comes from an amazing new vegan friend that recently embarked on a fully plant based journey after being vegetarian up until a year and 5 months ago.

60g oats
50g almonds
Generous pinch of sea/Himalayan salt
3 tbsp liquid coconut oil
2 tbsp cacao powder
2 tbsp cacao powder
2 tbsp agave/maple syrup
MethodBlend the oats and almonds in a blender until roughly chopped (unless you prefer a smoother base then blend for longer) add the salt, coconut oil, cacao, syrup and stir together. Once combined use your hands and roughly rub the ingredients together. This helps the oats soak up the coconut oil and syrup. Pour into your loose base tins and press down firmly. Be sure to push around the sides to create a dip in the centre for filling. Set aside while you prepare the filling.
Ingredients Filling200g vegan white chocolate (I used Plamil organic white chocolate)
160g tin of coconut cream minus water
140g pure coconut cream
1 tsp vanilla extract
MethodOn a low heat pour the cream into a saucepan, add the chocolate and vanilla. Keep stirring (don't let it burn) until you have a caramel like consistency. Pour into bases and allow to cool for a few minutes before placing in the fridge. Chill for 4 hours or longer. Gently remove from cases and decorate with milk/dark chocolate drizzle, raspberries and a sprinkle of cacao powder. Enjoy straight from the fridge.

"I was vegetarian up until a year and 5 months ago when I watched some documentaries on Netflix. I didn't know the horrors behind eggs and dairy. I felt like a hypocrite being vegetarian because I love animals yet still drank milk and ate eggs. Over 2 weeks I phased out all animal products and it was one of the BEST things I've ever done. I lost 2 stones, I felt so healthy, I had more energy, slept better, my skin & eyes were glowing and so much more. My sister who ate meat was so inspired by my vegan journey that she went vegan 2 months after me.
My Instagram was set up as I was sick of being asked what I ate so by posting my meals I could show people it's not all tofu and salad."
