Vegan Chow Mein Dinner

I love quickies! Jam packed with vitamins, minerals and all the nutritional winter goodness our bodies need. Prep and cook time takes 15 minutes if you have induction cooking otherwise allow 30 minutes. 

Vegan Chow Mein  


1 head of cabbage

3-4 carrots

1 cup of frozen peas

1 can of crushed tomatoes

1 can of lentils

1-2 onions chopped  

3-4 crushed garlic

1-2 tsp vegan chicken stock

Salt and pepper

Drizzle of smoked sauce   

Handful of chopped parsley  

1 cup of cooked rice, noodles or quinoa


Chop, slice and dice all vegetables. Sauté onions and garlic until soft, add all vegetables and seasoning and pour 1-2 cups of hot boiling water over cabbage and simmer for 10-15 minutes. 

Serve with crusty bread and enjoy!
