Raw Bounty Bars that are out of this world

Now these Raw Bounty Bars are of this world! Yes. You can thank me later ... Whenever I feel like a treat less the guilt, this recipe always comes to mind.

Raw Bounty Bars

These incredibly delicious raw bounty bars are made using all natural ingredients. They’re gluten free, dairy free, refined sugar free and, importantly for school lunchboxes, nut free. And the best thing is they last for up to two months in the freezer, make a large batch to keep on hand for surprise guests or for when a sugar craving hits!

Makes 20

Ingredients

1/4 cup coconut oil, melted 1 cup coconut milk 4 tablespoons organic honey, melted 1 teaspoon vanilla essence 1/4 teaspoon sea salt 3 cups organic shredded coconut 150 grams organic dark chocolate 1 tablespoon coconut oil

Method

Add coconut oil and coconut milk to a medium size bowl and whisk to combine. Make sure there’s no separation between the coconut oil and milk. Next add the honey, vanilla essence and sea salt to the coconut mixture and mix thoroughly. Finally, add the desiccated coconut and stir through.

Pour the filling into a square baking dish, lined with non-stick baking paper, and pop into the freezer for roughly an hour to firm up. Once frozen, remove from the freezer cut into squares and then freeze for another 30 minutes.

Once the 30 minutes have passed, melt the chocolate and coconut oil in a heat proof bowl above simmering hot water. Take the coconut bars out of the freezer and place them on a cooling rack, above a few sheets of baking paper. Liberally drizzle the coconut bars with chocolate, letting any extra chocolate drip onto the baking paper beneath.

Freeze until the chocolate has hardened (approximately 30 – 60 minutes). These will last up to two months in the freezer
