Pumpkin Goats Cheese Salad

The quickest salad you will make under 5 minutes. We have this as a side with many of our favourite main dishes, in this instance we had lamb cutlets. 
Pumpkin Goats Cheese Salad

Ingredients

1 bag of spinach

2-3 cubes of Meredith Dairy Goats cheese

1/4 butternut pumpkin

Drizzle of olive oil (I used the oil in the goats cheese jar)

Sprinkle of cinnamon

Method

Finely slice pumpkin and spread out on a plate. Sprinkle cinnamon. Cook in microwave for 2-3 minutes. Allow to cool.

Mix with spinach leaves, cheese and drizzle some olive oil. Squeeze some lemon (optional).
