My Sedona Dream Dehydrator and Eggplant Jerky

I'm in love with my new Sedona dehydrator. My great friends at Raw Blend have always looked after me and my family over the years, from blending smoothies and making nice creams to making hot soups in our Vitamix. Now we have a new Sedona Dehydrator and we are thrilled with all the recipes we are going to create. Just quietly I think Nina our French Bulldog puppy will be even more excited as I will be making her vegan treats from Sweet Potato Dog Chews, Dried Bananas, Apples, Green Bean Crunchers etc... the list is endless. 

I persoanlly have my eye on this recipe:

Eggplant Jerky


700g eggplant

Ingredients - Sauce

1/4 cup tamari

1/4 cup maple syrup

1/4 cup olive oil

2 tsp bbq seasoning (tumeric and cumin)

1 tsp smoked paprika

1/2 tsp cayene pepper

1/2 tsp salt


Slice the eggplant into even strips.

  1. Sprinkle salt over the top and pat down with a paper towel to dry out.
  2. Place in large bowl.
  3. Combine the marinade ingredients in a small bowl and pour over eggplant strips.
  4. Marinate for up to 24 hours and then arrange on dehydrator tray with the divider tray underneath.
  5. Dehydrate on 68 degrees C for 8 hours and then bring down to 42 degrees C until the jerky is crispy.

Watch this video to see the magic happen. This recipe totally blows my mind! Who ever said eating a plant based diet was boring hasn't tried these babies. I cannot wait to make these!
