Healthy Tabouli with Quinoa
I have been a huge fan of this salad since exploring the world of falafels. What's even better is that I love making this simple, yet flavoursome and refreshing salad in minutes.
Healthy Tabouli with Quinoa
Ingredients
1 cooked cup of quinoa
1 bunch of parsley chopped
3/4 cup chopped mint
1 cup finely chopped tomatoes
1 finely diced cucumber
1/2 red onion finely diced
Salt and pepper to taste (if required)
Method
Mix all ingredients together. Squeeze entire juice of a lemon, add a dash of olive oil and that's it! Super healthy and tasty you can add to any type of salad or place in kids lunch boxes
