Delicious Avocado Mushroom Tofu Breakfast
Who else loves a good sour dough toast? That bread gets me every time and don't get me started on avocados, mushrooms and tofu. I love my local Saltbean Expresso cafe for creating my vegan breakfast this morning.
Here's some fun healthy fun facts on;
They have close to 20 vitamins, minerals and phytonutrients, including 6% of the recommended Daily Value (DV) for vitamin E, 4% vitamin C, 10% folate, 11% fiber, 2% iron, 6% potassium and 136 micrograms of lutein per 50g serving.
So make sure you have an avo this week.
These babies are an excellent source of many minerals including copper, selenium and phosphorus. They are also an excellent source of B vitamins including vitamin B2, niacin and pantothenic acid. In addition, mushrooms are a very good source of potassium, zinc, vitamin B1 and manganese.
Cooked mushrooms have a greater nutritional value than eating them raw.
This guy is an excellent source of calcium and a very good source of manganese, copper, selenium, protein and phosphorus. In addition, tofu is a good source of omega-3 fatty acids, iron, magnesium, zinc and vitamin B1.
I love him so much and mix things up with a bit of tempeh from time to time.
Avocado Mushroom & Tofu on Sour Dough Bread
Simply toast your sour dough and set aside.
Marinade your tofu in soy sauce and gently pan fry with mushrooms and crushed garlic until cooked.
Slice or smash your avocado on the sour dough toast and stack this goodness on your plate. Season with some salt and pepper and drizzle some rocket and basil oil.
