Chocolate Chia Fudge Slices for Easter

With Easter around the corner Noah asked what will the Easter bunny bring us? I said the same treats as he always does. Less the dairy (wink) but all in all it made me whip up these beauties as I used to make them with butter and eggs but I'm slowly learning how to substitute those two ingredients since eating plant based foods these days.

Without further adieu here are our Easter inspired little treats less the guilt.

Ingredients

  • 1 cup of gluten free flour (I mixed 1/2 cup of cacao powder + 1/2 cup of almond meal)
  • 2 chia eggs (2 Tbsp chia seeds + approx. 5 Tbsp water)
  • 1/2 cup coconut oil
  • 1/2 cup coconut sugar
  • 1/4 cup maple syrup (if you like it sweet)
  • 3/4 baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt

Method

Mix all your dry ingredients together (if you haven't prepared your chia eggs before hand, simply place them in water and set aside to set). Then mix all the wet ingredients together and add chia eggs.

Line a baking tray with baking paper and bake in a pre heated oven 170-180C degrees.
