Cheesy Meatballs and Mushroom Pies!
Every Sunday I love to meal prep for the week. As the school holidays come to a close in NSW and things get back to normal for me (after the whole Sydney and Melbourne trip visiting Dads place, calling his friends and arranging his wake etc...) things took a toll on me, it's really great to be home. That's why I'm loving creating all these beef recipes that I have been sharing with you lately! Jam packed with iron, protein and zinc to give me the KAPOW to soldier on as A Stay At Home and business woman who continues to feed me and my family healthy beef recipes that keeps us winning!
I love these cheesy meatballs and mushroom pies as they’re so versatile! They are super handy for after school snacks and kids lunch boxes. I typically serve with crunchy salad and a side of olive oil, lemon juice and salt and pepper dressing. Or, make a batch in bulk and freeze them, so if you’re short on time you can just whip these out and have a meal ready in minutes!
Serve these tasty treats to your kids and you can be confident they’re getting the goods to help them power through the day. The iron in beef helps your kids keep their energy levels up and allows them to concentrate in the classroom. Beef also contains protein, which keeps your kids fuller for longer (or at least until school ends) and zinc, which is necessary for growth and maintaining a strong immune system.
Ingredients
1kg beef mince meat 1 grated onion 1 grated carrot 1 crushed garlic 2 eggs Handful of chopped parsley ½ grated beetroot ½ cup of sliced mushrooms ½ cup of grated cheddar cheese 1 slice of wholemeal bread crumbed Salt and pepper to taste
Method
Combine all ingredients in a bowl and set aside half for meat balls and the other mixture in a muffin tin tray, sprinkle cheese and add mushroom slices.
Preheat oven and cook in 180C degrees until golden brown.
