Beef Paprika Slow Cooker Goulash

For those mid-week nights when you’re short on time and don't want to have to slave away in the kitchen, this family favourite recipe always comes in handy. It's done in the slow cooker so you can enjoy quality family time and sit down to a beautiful meal together later that evening. Just prep it in the morning and let it cook away in the day! It's another classic Serbian and Croatian beef goulash dish I was brought up on and even though it comes from our neighbouring friends in Hungary, we still claim it’s ours! PLUS I've once again placed my healthy twist on it!

Besides wanting to make healthy meals for my family, I also know how busy life can be and the importance of having enough energy to face the day. To get the right fuel, we need to ensure we are getting enough iron - I can’t believe 1 in 3 Australian women aren’t getting enough iron! Man! I think I’ve been that statistic this week with the death of my father, I have lost my appetite and haven’t been looking after myself.

But I am back baby! Life goes on and I know I am better on beef as it gives me twice the iron of pork and four times the iron of chicken. Eating beef 3-4 times a week gives us a better chance to ensure we are meeting our body’s iron the zinc requirements to allow it to function at it’s best.

So enjoy this family classic dish of ours!

Beef Paprika Slow Cooker Goulash

Ingredients 1kg chuck steak pieces 1 onion finely chopped 2 crushed garlic 2 red capsicums, diced (1/2 cup of sliced mushrooms) 1 finely diced carrot 2 tbsp flour 2 tbsp smoked paprika 4 dried bay leaves ½ cup of natural Greek yoghurt Parsley to garnish Method

I typically fry the beef and vegetables in some olive oil to brown the beef and lock in more flavours but you can place all these ingredients in the slow cooker and pour over water until you are ready to serve.

NB: I like to make a thicker sauce by adding 2tbsp of flour in a fry pan with a touch of oil and add some water to make a paste and then place in the slow cooker to thicken. Also mushrooms are a big ingredient hit for this recipe but I didn't have any, add those if you get a chance.
