Mango porridge and add some steps today

Good Morning beautiful you! Things were pretty busy this morning in our household – actually the whole week… and last week… and the week before! I am very glad I took the time and spent 5 mins last night to prepare the kids morning breaky.....

I simply pour the oats into a container (which has a lid and hangs out in the fridge overnight. I make a large batch for the week, you can simply put glad wrap straight over your cereal bowl to serve one.)

Add some water or favourite milk
Rind and juice from a lemon and an orange
Sprinkle some delicious cinnamon
A couple of drops of vanilla essence
1tsp chia seeds, other seeds and nuts
A few sultanas
In the morning, all you have to do is serve it. There is no cooking required!! Add whatever fruit you have (we had a banana, handful of blueberries with slivered almonds and that was it!!!!) This was so beautiful and fresh tasting, as all these wonderful flavours had a party together while the kids were sleeping last night. The kids really enjoyed this dish this morning. THEY LOVED decorating it!!

Oh yes, I just had my quick mango oats, sprinkled with cinnamon cacao. Delicious!

I hope this gives you some inspiration to be creative with your porridge in the mornings especially when you don't have time to cook it over a stove top! Only under extreme emergencies do I use the microwave as I really don't want to degrade this fine grain. What are some of your favourite porridge creations???

After school drop off on most mornings I take my Volvo for a drive to my favourite headland and lookout. It feels like home and it takes me everywhere I want to go and discover our new coastal neighbourhood. How lucky am I to have this view at my door step? It's my ultimate getaway machine and I love the places my Volvo let's me explore.

I did a quick beach power walk to the Norries Headland steps (gotta get a kick start to those 10,000 steps somehow!) and now I need to cram in a 15 minute super workout! I'll do some lunges, squats and mountain climbers. It's all doable, you just need to make time for yourself.
